Grilled Trout with Spanish Spice rub – Rubs work great with trout and this recipe pays homage to flavors of the sun.  Paired with Swiss chard and whole grain rice scented with lemon.

Almond and Sunflower Seed crusted trout - A seed and nut coating that provides great texture and flavor with a twist on the familiar.  Roasted root vegetables and steamed broccoli complete the plate.

Spinach and Tarragon Stuffed Trout - Both tarragon and spinach have an affinity for trout, and these ingredients combined with cream cheese, red onion and Greek yogurt marry well for a flavorful stuffing for boneless butterfly fillets.

Grilled trout on bed of kale salad - Kale has been discovered by consumers for its super healthy attributes, and this recipe capitalizes on that popularity with a fabulous combination of marinated kale greens with Romano cheese, EVOO, balsamic vinegar and currants. Topped with grilled trout, this makes for a great luncheon entrée.
